Our Practices:
We use crop rotation to reduce erosion and pest infestation along with the use of natural pesticides.  4ft row spacing to use tractor to reduce weeds instead of using herbicides.  Drip tape to water instead of using overhead watering reducing mildew and pest infestations.  Only pure spices–no additives, fillers or preservatives.  Use GAP standards to prepare produce for market.  Planting on mulch & ground covers to reduce water evaporation and pest infestation.  Compost garden waste and turn under vegetation to reduce and control weeds.  Grass stripes throughout fields to reduce soil erosion.  Time plantings to avoid pest maturity cycles.

I strive to use local and/or organic produce available seasonally first by buying and supporting my fellow farmers in the markets, secondly I source them from nearby local and/or organic farms, and finally filling in the ingredient gaps with local/organic produce when available in the grocery store.  I buy my Kimchi, salad, and soup veggies from Turner Farm, Our Harvest Cooperative, Rice Family Farm, Can-Du Farm, Salatin Farm, Our Garden Shack, Elmwood Farm and many more.

Herb & Green Onion Quiche

Ingredients
  • 1 recipe pie crust
  • ½ – 1 cup shredded or crumbled cheeses
  • 1 bunch green onions, chopped
  • 8 eggs
  • 2–4 tbsp chopped fresh herbs
  • ¾ cup cream or milk
  • ¼ cup chopped green garlic or garlic scapes (or 1-2 tsp garlic)
  • salt and pepper
Directions
Place pie crust in a greased pie pan.  Sprinkle green onions, herbs, and green garlic/scapes on pastry (if using garlic, you might want to sauté in a bit of olive oil for a milder garlic taste before adding).  Then sprinkle on cheeses.  Whisk eggs with cream and pour over the onion and herb mixture.  Sprinkle with salt and pepper to taste.  Bake at 350° for approximately 40–45 minutes, or until golden brown.   (Can add greens, bacon, cubed ham, sausage, other vegetables to this basic recipe.)

Bok Choy Stir Fry

Ingredients
  • 2 lb Bok Choy or Chinese cabbage
  • 1/3 cup dried hot red pepper
    (or chopped fresh hot pepper)
  • 1/4 c chopped green garlic or garlic scapes or
  • 2 tsp minced garlic
  • 3 tbsp peanut oil
  • 2 tbsp chopped fresh ginger
  • 1/2 tsp sugar
  • 1 tsp salt
  • 2 tbsp broth or water
Directions
Wash and chop cabbage/choi into 1 – 1/2 inch pieces. Dice pepper.  Heat oil in wok, stir in ginger and garlic, toss for one minute.  Add cabbage and pepper, cook for 2 minutes stirring constantly.  Stir in sugar and salt, then add broth.  Cover and cook for 2- 3 minutes until cabbage is tender but still crunchy. (Can add green onions, pine nuts, a few drops of sesame oil or other vegetables.  Can also add shrimp or chicken.)

Haute Chocolate’s Raspberry Oatmeal Cookie Bars

Ingredients

  • ¼ teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 egg
  • 1/8 teaspoon salt
  • 1 cup rolled oats
  • ½ cup butter softened
  • ¾ cup seedless raspberry jam

Directions

Preheat your oven to 350 degrees

Grease one 8×8 square pan and line with greased foil

Combine brown sugar, flour, baking soda, salt and rolled oats and beaten egg in large bowl.

Using your hands, form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the Raspberry jam to within ¼ inch of the edge of the pressed mixture. Sprinkle the remaining crumb mixture onto the top of jam and lightly press the crumb mixture into the jam

Bake for 30-40 minutes in a preheated oven. Cool and cut into bars
